Executive Chefs Jorge Matzuda from Tzuru Nikkei Restaurant in Lima, Peru and Koyi M. Tanabe from our newest restaurant Blue Grill + Bar will present a 6-course dinner on the best of the Peruvian Cuisine and its influence.

 

To celebrate the Independence Day of Peru, Eden Roc at Cap Cana is delighted to announce the upcoming visit of Jorge Matzuda for a 6-course dinner at BLUE Grill + Bar on Friday July 28th, showcasing the peruvian cuisine and its influence of the 4 continents.

 

Jorge Matzuda is a young Nikkei Chef born in Lima, Peru in 1987. His parents arrived in Peru among the first Japanese migrants. Being this the reason that Chef Matzuda grew up with a mix of Peruvian and Japanese traditions at home. He studied Culinary Arts at San Ignacio de Loyola University in Peru, started working at Edo Sushi Bar at age 17 and due to his ties with Japan and he’s Japanese ancestry he received a scolarship at age 20 to study Culinary Arts in Kagoshima, Japan, where he had the opportunity to travel and then work in a Kaiseki restaurant downtown. Back in Lima he was head of itamaes of one of the local Edo Sushi Bar for several years. At the age of 25 he traveled to Italy and mastered in Italian Cuisine at the Italian Culinary Institute for foreigners where he then worked with Massimo Bottura at the Osteria Francescana in Modena. After his journey in Italy, he went back to Lima and started his own restaurant project, Tzuru Nikkei Restaurant, where the main focus is the elaboration of contemporary Peruvian-Japanese fusion cuisine and author dishes of the Japanese tradition with Peruvian ingredients. Jorge Matzuda is currently manager of Tzuru Nikkei Restaurant, supervisor of gastronomic operations of the Edo Sushi Bar chain in Lima, member of the Nikkei Gastronomic Association in Peru, and member of the Generation of young Peruvian Cooks.

 

“Four continents in one country” at BLUE Grill + Bar will be a 6-course special dinner on Friday July 28th. The price per person is USD 160 including taxes and service charges. Children are charged 50% of the regular price.
