MANOIR HOVEY GETS A CARIBBEAN FLAVOUR

A Caribbean dining experience will be offered on the shores of Lake Massawippi on June 30 when chef Gianluca Re Fraschini visits Manoir Hovey to prepare a four-course meal.

The Italian-born chef from the Eden Roc at Cap Cana resort in the Dominican Republic will combine Mediterranean and Dominican flavours in his tasting menu, which will begin at 6:30 p.m. with a Caribbean cocktail.

Appetizers will include fried plantain served with lobster and coconut sauce, and crisp pork belly chicharron. After a risotto made with red peppers and a beef-cheek stew with curry, the main course will be mahi mahi fillets with pigeon peas. Bitter chocolate with tropical fruit and sorbet will cool appetites, and the meal will wind down with coconut macaroons with pineapple cream and Dominican rum and chocolates. Cigars will be optional. Merengue music will entertain guests during the evening.

The dinner, priced at $125, may be enjoyed with specially selected wines for $185. You can reserve by calling 819-842-2421.

Next autumn, the two Relais et Châteaux properties will complete the flavour exchange when Manoir Hovey chef Francis Wolf takes his regional Quebec cuisine to Eden Roc.

Manoir Hovey is located at 575 Hovey St. in North Hatley, a 90-minute drive from the Champlain Bridge; take Highway 10 east, then Exit 121 onto Highway 55 south, then Exit 29 onto Highway 108 and follow signs.
